BAJA STYLE GROUPER TACOS
INGREDIENTS
1lb pack of Fresh Grouper fillets from SSS.
shredded cabbage
1 cup of Pico de Gallo
I lime
6 corn tortillas
coconut oil for frying
Seasoning- 1 tsp chili powder, 1/2 tsp sea salt, 1 tsp garlic powder, 1/4 tsp cayenne, 1/2 tsp coriander,
Avocado Cream Sauce - 1/2 cup sour cream, 1/2 cup mayo, 1 large avocado, 1/2 lime juiced, 2 Tbs cilantro, 1 garlic clove
your favorite hot sauce
cold beer!
INSTRUCTIONS
Preheat oven to 400 degrees.
Open your fresh grouper pack and pat dry with paper towel. Cut into one inch cubes.
In a bowl mix together all seasonings and toss in the cubed grouper coating evenly as you toss. Then place the fish spread out on a baking sheet and bake 10-12 minutes.
While fish is cooking put all avocado cream sauce ingredients in a food processor until well blended. Place in fridge until ready to serve.
Pan fry the tortillas in coconut oil for 15 seconds each side then set aside on paper towels. Tortillas should be pliable.
Fold tacos and place fish at the bottom followed by avocado sauce, shredded cabbage, pico de Gallo and a squeeze of lime.
Serve with your favorite hot sauce and a cold beer.
