Wahoo holds a special place in our hearts as the favored catch among fisherman here in Puerto Rico. These images provide a glimpse into the process of securing this delectable fish, offering you a firsthand look at its journey from the deep sea to your dinner plate.
Our preferred method of capturing wahoo is by speargun. With their extremely sharp teeth and mind-blowing speeds, this specie can be very difficult to land by traditional rod and reel methods. By entering the water and stalking them in their own environment we can get close enough to make the proper shot to ensure they end up in our cooler.
Once caught, the wahoo is bled immediately to preserve the freshness of the meat. Next, the fish is gutted, and the unused parts are returned to the ocean as chum, contributing to the marine ecosystem. This not only prevents waste on land but also provides a valuable food source for other ocean animals and allows us to keep fishing without taking additional baitfish. The gutting process also enables us to pack the belly cavity with ice, maintaining the meat at an optimal temperature until we return to land to process the fillets for your enjoyment.
