WHOLE GRILLED CARIBBEAN LOBSTER (Old lobsterman’s recipe)

Ingredients:

  • 1 whole lobster from SSS, defrosted for 4-6 hours in the fridge

  • 1 lemon

  • 3 cloves of garlic

  • 2 tbsp butter

  • 3 tbsp olive oil

  • Sea salt and cracked black pepper to taste

Instructions:

  1. Prepare Lobster:

    • Remove the lobster from SSS and unwrap. Some dark fluid around the tail and legs is normal (lobster blood and ink).

    • Rinse off completely under cold water and wrap in paper towels. Place on a plate in the fridge until defrosted.

  2. Prepare Garlic Butter Sauce:

    • In a blender, combine lemon, garlic, butter, olive oil, sea salt, and cracked black pepper. Blend until a smooth garlic butter sauce is formed.

  3. Cut and Grill Lobster:

    • Once defrosted, place the whole lobster upside down on a cutting board.

    • Using a large knife and mallet, cut the lobster in half. (Refer to the video for guidance.)

    • Preheat the grill to high heat (around 400 degrees).

    • Place the lobster on the grill shell down and baste the meat with the garlic butter sauce.

    • Continue to baste every few minutes until the meat in the tail becomes firm to the touch (approximately 10 minutes for a 1.5 lb lobster; add 5 minutes for each additional pound).

  4. Finish and Serve:

    • Remove the lobster from heat and let it cool on a plate.

    • Drizzle the remaining garlic butter over the meat.
