WAHOO WITH MANGO SALSA

INGREDIENTS

  • 1 pound Wahoo from SSS packet. (We suggest using fish from the frozen packet)

  • sea salt and cracked black pepper

  • 2 tablespoons avocado oil for searing

  • 1/2 medium red onion diced

  • 1/2 cup chopped scallion

  • 1 red bell pepper diced

  • 1/2 cup chopped cilantro

  • 1 diced jalapeno

  • 1 juiced lemon and 1 juiced lime

INSTRUCTIONS

Take the fillets out of the Secret Seafood Society bags and wrap in paper towels. Place in fridge while you prep the rest of the ingredients.

FOR THE MANGO SALSA

  1. Comine and mix all ingredients (except wahoo) in a medium sized bowl.

  2. Cover and chill in fridge

FOR SEARED WAHOO

  1. With fillets completely dry sprinkle both sides with sea salt and ground black pepper.

  2. Heat the avocado oil in a skillet with medium heat

  3. Cook fillets for 4 minutes each side once the oil is hot. Adjust the cooking time depending on the thickness of fillets. Outer layer should be a golden brown with a light, tender white color for middle of fish

  4. Top with mango salsa and enjoy the amazing flavors of fresh mango and fish from Rincón, Puerto Rico.
