Smoked Mackerel pasta with chilies and lime

INGREDIENTS

  • 1 steak of smoked mackerel from your SSS package, flaked with a fork

  • 1 lime

  • 1 teaspoon of dried chili flakes

  • 1 Garlic Clove

  • 3 TBSP of Olive Oil

  • 1/4 cup of Italian Breadcrumbs

  • Half a box of Fusilli pasta

  • 1/4 cup of fresh chopped parsley

  • Sea Salt and Cracked Black Pepper to taste

INSTRUCTIONS

  1. Heat a large pan of boiling water to cook the pasta.

  2. Peel and mash the garlic into a paste.

  3. Zest and juice the lime.

  4. Add pasta to boiling water and cook until al dente.

  5. Heat a frying pan over a medium heat and when it is hot add one tablespoon of the oil.

  6. Add the garlic and breadcrumbs and cook until golden, stirring regularly to avoid burning the breadcrumbs. Once they are golden remove and set them aside.

  7. Add the remaining olive oil to the pan along with chili flakes and cook for 1 minute continuously shaking the pan to mix the flakes into the oil.

  8. Add the flaked fish, this is already cooked so just needs to be bought to a nice temperature which should take a couple of minutes.

  9. Drain the pasta and add it to the fish, toss to coat and add half of the lime juice.

  10. Serve topped with the toasted breadcrumbs and freshly chopped parsley.
