blackfin vs. skipjack sashimi

INGREDIENTS

  • 1 steak each of blackfin and skipjack from your SSS package.

  • Ponzu or Soy Sauce

  • 1/4 cup Mayo (Kewpie recommended)

  • 2 TBSP of Sriracha

  • 1 TBSP of Sesame Oil

  • Black Sesame Seeds

  • Black pepper

  • Blindfold

INSTRUCTIONS

  1. Open your fresh Tuna pack from Secret Seafood Society. Wrap fillets in paper towels and let thaw in fridge for 3-4 hours.

  2. Separate the Blackfin and Skipjack on each side of the plate. Slice the fish across the grain into very thin slices. Sprinkle a little soy or ponzu over the pieces and add a small cup of the sauce to the plate for additional dipping.

  3. In a bowl mix together the mayo, Sriracha, sesame oil and Black pepper. Spoon the sauce and drip sparingly along the edge of the plate and over a few pieces.

  4. Sprinkle a dash of black sesame seeds over entire dish. Feel free to add any garnish like scallions, sliced avocado or sliced ginger.

  5. Place the blindfold over your eyes and have someone rotate your plate. Try a piece of tuna and see if you can tell the difference between the Blackfin and Skipjack. Make sure to try a piece without any sauce on it as well!
