WAHOO CRUDO

INGREDIENTS

  • 1 pound WAHOO from SSS pack. (We suggest using from the fresh packet)

  • sea salt and fresh ground pepper (to taste)

  • 1/2 lemon for juice and zest

  • 1 tablespoon extra virgin olive oil

  • 1 tablespoon of chopped chives

INSTRUCTIONS

  1. Open your fresh wahoo pack from Secret Seafood Society. Wrap fillets in paper towels and let thaw in fridge for 3-4 hours.

  2. Slice the fish across the grain into very thin slices. Season each slice with the sea salt and fresh ground pepper.

  3. Squeeze the lemon into a bowl and zest the rind. Whisk together with olive oil and chives. Spoon over the fish, and serve.
